    Renowned Chef Alessandro Pavoni will introduce Cibaria Manly – a relaxed Italian all day dining destination set against a beachside backdrop – to the Manly Pacific MGallery Collection,

    The chef, best known for his culinary success at Ormeggio at the Spit and a’Mare, envisions Cibaria as a European-styled culinary haven where socialising seamlessly transitions from casual café to classy aperitivo, and long lunch to a late night gelato.

    “Cibaria embodies the essence of European warmth, inviting guests to savour the simple pleasures of life,” said Pavoni.

    Manly Pacific general manager Dylan Cole said the venue was thrilled that recent renovations are now able to house a restaurant helmed by a chef of Pavoni’s status.

    “Having a chef of such prestige and calibre in our property serves as a testament to the quality of our hotel,” he said. “We are so confident in the luxury experience we can provide for our guests and this demonstrates our offering is going from strength to strength.”

    Whats on the menu

    At Cibaria Manly, patrons can expect a curated menu experience, featuring various Italian ‘ria’ sections such as braceria, forneria, spaghetteria, and pasticceria, each offering distinct culinary delights.

    “Every dish at Cibaria is a tribute to Italy’s rich culinary heritage, we are committed to cooking Italian cuisine with its roots in tradition, yet a strong sense of local place,” said Pavoni.

    Another noteworthy aspect is the collaboration with Ormeggio’s Victor Moya to deliver world-class gelato artigianale, available for takeaway from the beachfront gelateria counter.

    Drawing inspiration from the Italian piazza, Cibaria Manly offers bespoke counter dining, lounges, classic tables and a rooftop terrace.

    Dylan Cole said the 2024/25 summer opening of Cibaria will contribute to Manly’s vibrant dining scene.
