Icebergs restaurateur Terzini joins Mangan at Sydney International Airport

Icebergs Dining Room and Bar restaurateur Maurice Terzini is to take his world-famous brand to Sydney Airport where he will join chef Luke Managan’s Luke’s Bistro & Bar which made its debut in December.

A favourite of English TV star Nigella Lawson, the iconic Bondi name will be offered up as Icebergs Bar + Kitchen and will open in mid-2025 at Terminal 3, The Sydney Morning Herald reported. The iconic restaurant’s first licence agreement is a collaboration with food and beverage operator Airport Retail Enterprises.

“It’s fantastic to have great brands join in our vision to make airport food a destination in itself,” Mangan told Travel Weekly from Tokyo where he is currently hosting a five-night pop-up at Hilton Shinjuku featuring Australian food and wine. The pop-up may be a precursor to launching a Luke’s brand in Japan.

Back at Mascot, the architect behind the Bondi Icebergs restaurant design, Carl Pickering, has already submitted plans for Icebergs Bar + Kitchen.

“In some ways it’s even more beautiful [than Bondi],” Terzini told the SMH. “The brief was to capture the Icebergs DNA. It’s really elegant and picks up on the same colours.”

He says Icebergs’ detail and attention to food, drinks and service will be offered to travellers, with a focus on coffee and Italian breakfast.

“We aim to offer a unique experience that will leave a lasting impression on both locals and international travellers,” Terzini said. “We’re not just opening a venue. We’re bringing a slice of Sydney’s heart to the airport.”

Located after security but at a different end to the new Icebergs Bar + Kitchen, Luke’s Bistro & Bar is a 200-seater, split between bar and booths and tables.

Open for breakfast, lunch and dinner and includes a menu full of seafood, shared plates and family favourites, plus a comprehensive classic cocktails and drinks list with a signature Mangan twist. Mangan would not confirm rumours he plans to open in more airports around Australia.

Sydney International Airport also offers The Bistro by Wolfgang Puck.
