Australia’s newest boutique hotel

Australia has a new queen, and it comes in the form of a fresh new coastal boutique hotel.

Bannisters Hotels today confirmed plans to expand its portfolio and open Bannisters Pavilion on December 1 this year, and it has high ambitions for the stylish property.

Off the back of the successful Bannisters by the Sea, including the Day Spa and Rick Stein at Bannisters Restaurant, the new Bannisters Pavilion will be a much anticipated hotel opening.

The new boutique hotel will offer 33 stylish guest rooms and two luxurious penthouse suites, with a stunning backdrop of eucalyptus trees. The hotel is set back from Mitchell Parade and Beach Road, steps away from Mollymook Beach, a gorgeous patch of coastline famous for its natural beauty.

A highlight of Bannisters Pavilion will be the expansive rooftop lined with sun beds, umbrellas, private lounge spaces, a bar-and-grill and spectacular suspended pool.

The rooftop was designed to allow guests to seamlessly move between the pool, bar-and-grill and lounge areas to take full advantage of the food & beverage options, available from noon. Food will be inspired by Mediterranean, Southern Californian and Mexican cuisines, and to top it off will come with a beverage menu of seasonal cocktails, craft beers and an Antipodean-focused wine list.

Bannisters Pavilion is a collaboration between owner Peter Cosgrove, architect Tony Freeman (Molnar Freeman), interior designers Mia Ward (Miwa Design), Romy Alwill (Alwill Interiors) and landscape designer William Dangar.

Situated just 100 metres from the beach, the design ethos focuses as much on the eucalyptus trees as its stunning aqua backdrop.

“Design inspiration was drawn from the natural beauty of the area and represents accent colours from both forest-and-sea,” Alwill said.

“Think earthy, modern, edgy-but-refined and very light, open contemporary spaces. There is also a nuance of Scandinavian design with light timber, dark charcoal and soft brass trimmings.”

Bannisters Pavilion represents a major tourism project for Mollymook Beach and the NSW South Coast, a blossoming region only a three-hour drive from Sydney and two-and-a-half hours from Canberra.
